Jap pumpkin (often called kabocha pumpkin) is a small, deep-green winter squash with sweet, nutty flesh that turns silky when cooked. It’s great roasted (caramelised edges!), steamed, or blended into soups and purées. The skin is edible when tender, so it’s handy for quick weeknight meals, just cut, scoop seeds, and cook until fork-soft.
