Did you know that carrots are the family umbellifer family Apiaceae? Along with angelica, anise, asafoetida, caraway, carrot, celery, chervil, coriander, cumin, dill, fennel, lovage, cow parsley, parsley, parsnip and sea holly.

So what do to with carrot tops? Anything you would use parsley for you can substitute with carrot tops: add to soups, casseroles, a blended herb pesto, chimichurri, salads or simply to garnish. By the way the tops are better for rabbits and guinea pigs than the roots, less sugar. And most prefer the tops to the bottoms!
